Fifth Annual COCHON 555 in Chicago 2013

Cochon 555: Pouring Cornerstone Wine

COCHON 555 (five chefs, five pigs, five  winemakers), a unique traveling culinary competition and tasting event, marks  its fifth anniversary tour. Created to promote a national conversation around  the sustainable farming of heritage-breed pigs, each event challenges five local  chefs to prepare a menu from the entirety of one 200-pound family-raised  heritage breed pig, nose-to-tail. Twenty judges as well as guests help decide  the winning chef by voting on the “best bite of the day.” This year’s event  includes the launch of a cocktail competition called “Punch Kings” featuring  Breckenridge Bourbon, with six local bartenders. The 4th ANNUAL COCHON 555; the ultimate 2012 Swine, Wine and Dine Event was held in Chicago! “COCHON 555  is a national event series that takes place in 14 major cities across the country created by Taste Network ‘s Brady Lowe in 2009 in response to the lack of consumer education around heritage breed pigs.”  Every January, C555 embarks on a 10-city culinary competition and tasting tour where 50 chefs compete.

The 2012 Grand Cochon winner was Nightwood’s Chef Jason Vincent of Chicago! BRAVO JASON!!!!!

“On June 17, 2012 at the Hotel Jerome in Aspen, Colorado chef Jason Vincent from Nightwood restaurant in Chicago was crowned “The King of Porc” with his snout-to-tail menu created from a heritage breed Tamworth hog sourced at Triple S Farm. Chosen by an audience of 600 attendees and a panel of 20 expert judges, Vincent took home a set of exclusive COCHON555 cookware from Le Creuset, a Cowboy Cauldron and a guest chef showcase weekend at Blackberry Farm in 2013.”

Here’s Jason’s winning Menu: “Vincent won with a menu of crisp liver, eight-year cheddar and Michigan Cardoon Giardinere and “Sunday Brunch” made up of a bacon butterscotch doughnut, soft scrambled egg, ‘hollandoink’, bloody mary, on the bone.” You can see the “King of Pork’s” masterpiece here:

Competing chefs for the Grand Cochon title included: Marc Forgione (NYC), Lars Kronmark (Napa, Calif.), Kelly English (Memphis, Tenn.), Naomi Pomeroy (Portland), Jamie Bissonnette (Boston), Michelle Bernstein (Miami), Scott Drewno (Washington, D.C.), and Ben Ford (Los Angeles).

The Cochon 555 Journey begins every January. The 10 city culinary competition selects five chefs from 10 cities to prepare a snout to tail menu from heritage breed pigs. The ultimate victor is crowned in Aspen. The King or Queen of Porc will receive a 2012 Guest Chef Showcase weekend at Blackberry Farm in Tennessee.

There were wines from five family wineries including: Chase Cellars from California with a vibrant Zinfindel; Elk Cove Vineyard from Oregon with incredible Pinot Noirs from the Willamette Valley; Buty Wines from Washington poured an excellent Cabernet sauvignon and syrah blend and Yorba Winery from Callifornia’s winemaker scored a home run with the Barbera. I loved the winemaker’s  leopard scarf the Scholium Project ! The Cochon 555 Tour culminates in a grand finale at the 30th Annual Food and Wine Festival in Aspen , Colorado.

At the Grand Cochon there will be: 10 Chefs, 10 Pigs and one Crown on Sunday, June 17, 2012 at 3:30 p.m.

“The finalists will each prepare dishes from a whole heritage-breed pig in this “head to toe” competition. The winner is determined by 450 guests and a panel of 20 esteemed judges. The event includes over thirty winning chef dishes from around the country, butcher demos, reserve wines, artisan cocktails, pig infused desserts and the award ceremony.” There will be a tasting of Domaine Serene reserve wines paired with the coveted Spanish pork, Ibérico De Bellota by Fermín imported by Wagshal’s Market. First Bites Bash 2013 in Chicago

Chicago‘s Restaurant Week starts in February. Tickets are available now for the First Bites Bash 2013. This is the annual kick-off event for the sixth annual Chicago Restaurant Week. Sweet and savory tastings from 50 of Chicago’s most celebrated restaurants and chefs will be featured in the magnificent Great Hall at Union Station Thursday, January 24 from 6 p.m. to 9 p.m. where you will enjoy savory and sweet tastings from over 50 of Chicago’s most celebrated chefs and restaurants.

Dirk Flanigan, Executive Chef of Henri and The Gage will host this year’s event, from which a portion of the proceeds will benefit Bear Necessities Pediatric Cancer Foundation.

Rock Your Palate 2012 in Chicago

Rock Your Palate 2012 in Chicago is a two-day pop-up event that will allow you to explore Chicago’s musical culture through art, food, and sound. The inaugural event will be hosted at Lincoln Park’s Floating World Gallery. This event will highlight the work of famous rock photographer Michael Weintrob.

Chicago’s top chefs including: Sarah Grueneberg (Executive Chef at Spiaggia), Dirk Flanigan (Chef, Henri and The Gage) and Giuseppe Tentori (Executive Chef, Boka and GT Fish & Oyster) who will prepare delicious  “musically-inspired dishes that interpret Weintrob’s work”  through the lens of Chicago’s most iconic musical styles.

WHEN: Thursday, September 13, 2012 from 7-10 PM

WHERE: Lincoln Park’s Floating World Gallery at 1925 North Halsted Street in Chicago.

15th Annual Ferrari Festival 2012 at The Italian Village Restaurant in Chicago

Chicago’s Italian Village on Monroe

If you love Enzo Ferrari (a former Formula One driver) and his magnificent world of high-performance luxury sport cars, this festival is for you. Attend the 15th annual Ferrari Festival on September 9, 2012.

The event will feature plenty of Ferrari gems and it will be held in front of the Italian Village Restaurants on Monroe Street from Dearborn to Clark. The Italian Village is in the Chicago Loop and opened in 1927.

There will be an open wine & cappuccino bar and lunch buffet at the  Italian Village . The Italian Village is the Oldest “Italian Restaurant in Chicago.” The restaurant has the largest wine cellar in the entire Midwest that holds over 45,000 bottles! They have also won the  Wine Spectator‘s “Grand Award” annually since 1984.

In 1981, Wine Spectator introduced the “Restaurant Awards” program. They review a restaurant’s wine lists on three levels: the Award of Excellence (basic), Best of Award of Excellence (second-tier), and the Grand Award (highest). I am in Amarone Heaven at the Village!

Every year in September, there is an annual Ferrari Festival with over 60 vintage Ferraris. There’s always plenty of food and wine.

WHEN: September 9, 2012

WHERE: Italian Village at 71 W. Monroe in Chicago

Tickets: Event is $30 per person

Proceeds support the New Lurie’s Children’s Memorial Hospital.

The Italian Village has been in the same family for three generations. Alfredo Capitanini, an Italian immigrant, opened The Italian Village in 1927. The menu once read: “ Spaghetti with Meatballs: 40 cents.” Alfredo’s wife, Ada, fed hungry patrons including performers from the Lyric Opera and Mayor Daley.

The second generation of Capitaninis, Ray, Frank and Ave then created ”the most celebrated wine list in the Midwest.” Here are some of the wines from Umbria.

Vivere is the most expensive restaurant in the building with a truly decked out dining room. I like the pumpkin-stuffed pasta and the duck breast with cherry sauce. Have some limoncello cheesecake if it’s on the menu. Vivere won numerous awards: “Best New Restaurant” from Esquire Magazine, DiRona Award from Wine Spectator and Ultimate Distinction by Wine Enthusiast. The Chef incorporates flavors from various regions of Italy. They also earned a Ospitalita Italiana Award for authentic Italian Cuisine.

I love the alfresco dining ambience of the Village. It is located on the second floor. The dining room is covered with a canopy of Italian lights.

The Italian maitre d’ Frank Sgro is legendary! He has spent most of his life at this restaurant. He started in 1959 as a busboy at the Italian Village at the age of 17. A few weeks later, Frank Sgro became the Maitre D’ and has been there for over 50 years! Now that is a dedicated and loyal guy.

“Frank is like part of the family,” Al Capitanini said. “He remembers everybody and what they’ve ordered and where they’ve sat, and he works the room and knows where to seat people, and he does it very graciously.”

At the Italy-inspired, columned bar you can order the delightful shrimp appetizer. There are plenty of large portions of authentic Italian cuisine in the dining room. I love the Frutta di Mare and Scampi Casalinga.

I always order the shrimp and mushroom Casalinga for an appetizer with a glass of the Stefano Farina Italian Barbera d’Alba. For dessert, I love the Tiramisu. I can’t help it, I am a creature of habit.
